  • 2 cloves of garlic, chopped

  • 1 red bell bell pepper, cut into strips
  • 1 yellow bell bell pepper, cut into strips

  • 4 cups of fish stock or vegetable stock
  • Saffron or turmeric powder
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Lemon cut into quarters to serve

Step 1: Preparing the Ingredients

Before you start cooking, it's important to prepare all the ingredients. Clean the seafood, removing any skins or dirt. Chop the onion, garlic, tomatoes and peppers. Make sure all the ingredients are ready and organized before turning on the stove.

Step 2: Preparing the Paella

In a paellera (or large, shallow frying pan), heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until they are soft and translucent.

Step 3: Adding the Vegetables

Add the peppers cut into strips to the paellera and sauté for a few minutes until they begin to soften. Then add the chopped tomatoes and cook until they fall apart and release their juices.

Step 4: Adding the Rice and Saffron

Tips and tricks

Use a traditional paellera for best results, but if you don't have one, a large, shallow frying pan will also work.

Don't stir the rice too much while it's cooking, as this can cause it to become soggy. Stir only occasionally to ensure it doesn't stick to the bottom of the paellera.

Try adding other ingredients, such as scallops, mussels or octopus, for an even more extravagant and tasty paella.
